Texas Brisket Sandwich

I was very energetic and ambitious today. I cleaned all the windows inside and out and cleaned all the screens. Brightened up the place, it’s nice to see outside… This afternoon Steve and I went to Sebring and went to the Mall… so sad that place. Sometime soon I’m going to Orlando to The Mall at the Millenia to do some Christmas shopping. Now that’s a fantastic mall. Steve and I went out to lunch to a BBQ place called Cowboys BBQ and Steakhouse. It was good, they have a lot on their menu. Steve had a Texas brisket sandwich and sweet potato fries and I had a hamburger with curly fries and fried pickles (frickles).

Cajun Sausage

I’ve been looking at and organizing all the food pictures I’ve taken in the last year and I can say that we eat a lot of tacos and sausage/hotdogs. I admit I do like them and they are really easy to make. Tonight I made Aidells Cajun Style Andouille Sausage, sautéed squash with onions, wild rice and butter beans.

Anniversary Tacos

Today is Steve’s and my 39 year wedding anniversary. I’m very proud of that accomplishment.  It’s been an exciting roller coaster ride.

For dinner I made Steve’s favorite meal… tacos.

No we did not go shopping today. I know why but I don’t know how people go to the malls on the Friday after Thanksgiving. But then I’m not a shopper any time of the year. We hung out at home. We put up our giant wreath that hangs on the side of the house. That will help get me into the Christmas spirit.

For dinner I combined last nights left overs and a newly roasted pork loin with gravy.

Happy Thanksgiving!

Well, we had a nice dinner for Thanksgiving but it wasn’t turkey. For some reason I decided to have ham instead of turkey. We had a Honey Baked Ham, scalloped potatoes, sautéed butternut squash and green beans. It was good but Thanksgiving just isn’t the same without the traditional turkey dinner with all the fixin’s…. and we missed out on all the leftover goodies. Oh well, lessons learned. I did make the most amazing Chocolate Cake ever. Death by chocolate!

Gyro Platter

Steve and I had a really nice day today. We drove down to Lake Okeechobee to fish and explore. Steve caught and hooked at least a dozen fish. I just watch….  The drive to the northern part of the lake is only about 40 minutes from our house. The weather was incredible, the day before Thanksgiving and it was 84°.

For dinner Steve had the rest of my Gyro platter from yesterday.
