Tonight we had dinner with our friends David and Lisa. We went to Don Jose’s Mexican Restaurant. They live in Sarasota so we don’t get together to often so it was nice to catch up on things. David is a fishing guide on Lake Istokpoga so he’s here more often but Lisa is busy with her two girls at home in Sarasota.

For dinner Steve ordered a cactus salad and the RED SNAPPER SERRANO, broiled snapper w/roasted tomatoes, chopped poblano peppers, mushrooms and onion. Served w/rice and black beans. He said it was very good. I ordered the same dish I had the other day for lunch when I was with Jess. David had tacos and Lisa had enchiladas. We had a good time!

Today is Jessica’s last day visiting us in Lake Placid.  We went out to Henscratch Farms to pick strawberries for her to take back to Atlanta. We went out to lunch and then Jess and Steve went fishing this evening. A nice day! For dinner I made a pork loin roast with roasted cauliflower, wild rice with toasted walnuts and tomato confit using our homegrown tomatoes and Seth’s recipe….

  • Tomatoes, cut up (Roma’s are good)
  • Olive Oil
  • Lots of salt and pepper
  • Roast at 425˚ until cooked down to almost a paste.

Spread over your favorite bread. We used ciabatta bread.

I also made a tomato salad with fresh mozzarella, fresh basil from my herb garden and drizzled it with olive oil and balsamic vinegar.

Jessica and I had a girls day out today. We left Steve at home to enjoy some solitude while we got pedicures. We then dove up to Sebring and ran a couple of errands before we went to lunch. One of the nicer restaurants to eat at in Sebring is Don Jose Mexican Restaurant. It was the perfect day to eat on their patio, we had it to ourselves. And of course I started out with a margarita and Jess had a Dos Equis on draft. We both ordered Ceviche Vallarta for an appetizer and decided to share Shrimp Salsa Verde for an entrée. They were both very good as well as the two extra margaritas I had…. and yes Jessica drove home!  We ordered the same thing to take home to Steve so although he was not along for the “girls day out” he got to enjoy a nice dinner from Don Jose Mexican Restaurant. After a walk with Betty (in the heat) I took a nice long nap.

Birthday Boy

Today is Steve’s birthday. He had a nice day. He opened some present in the morning then he and Jessica went fishing while I stayed home and baked him a German chocolate cake. After fishing we went out to lunch and then stopped by a local outdoor sport store for Steve to pick out some new fishing shirts and shorts (his year round uniform). Seth called to wish him a happy birthday and Emily called from Mexico to do the same. Steve has two favorite meals, beef stroganoff and beef tacos. His birthday meal choice this year was to have tacos. Alright by me… a very easy meal to make. We also made some yummy guacamole. With the German chocolate cake we had some double dark chocolate and Caribbean coconut Talenti Gelato. Man is that good!!!! Another birthday behind him….

We had a great day today. Weather was perfect for a day on the lake. We live on a canal on Lake Istokpoga. Here are some views out our  backyard…

After a few hours on the lake we came home, made some cocktails and fished for crappie on the dock. It’s always catch and release… We then grilled some New York strip steaks and corn on the “COBB”. Baked a potato and had a great tossed salad. A yummy ending to a great day!

Chicken Marsala

We had light rain all day but still managed to get a couple of nice walks in with Betty. My almost “daily” ritual of a run to the grocery store was part of todays schedule as well. I spent time looking through foodgawkers for new recipes to try. I found two to go with the Chicken Marsala I was making. I jazzed up some mashed potatoes and made a cucumber salad, we had sautéed spinach as well. It was a very nice dinner!

Dinner of Apps.

Again… a late lunch and no one is hungry for dinner. Jess and I could forego eating all together but by 8:30pm Steve defiantly needs food. We decided to run to the grocery store and get some pre-made frozen hors d’oeuvres. The truth is we took off to the grocery store to buy power ball tickets for the drawing tonight, 212 million dollars coming in my direction!!!! Anyway back to dinner… The Sweetbay grocery store has a line of frozen foods called Taste of Inspirations. We bought five different hors d’oeuvres, no need to list them. They were just ok, not sure I would get them again but Steve got fed.
