Where’s the Beef

It was a beautiful day outside today. I spent some relaxing time in the hammock reading.

Green Tomatoes

The tomatoes on our tomato plants are showing signs of ripening. Poor things have had a tough winter. There are a lot of them so we decided to pick some green ones and make fried green tomatoes. We also had sautéed spinach and a baked sweet potato. To top it off  we grilled a couple of rib eye steaks. Very yummy!

Another cold front came through… Now when I say cold, this time it’s only in the low 60’s. Not bad at all but it was warmer in Denver then Florida. Very windy here too.

Potato Encrusted Cod

For dinner we enjoyed a nice potato encrusted cod, almond pilaf and roasted asparagus. We shared the last ripe tomato from our plants (lots of green ones still), scallions and for dessert some jello…

Sunday Brunch

I completely spaced out posting last nights dinner. I fell asleep….  Steve had a grilled pastrami sandwich with swiss cheese and tater tots…

Today Steve and I drove over to Tampa to visit my sister Alice and her husband Brian and my niece Megan. Megan just moved to Tampa and is stationed at MacDill AFB. “Mom & Dad” were helping move her things down from Connecticut. She is a third generation Air Force officer. Her Grandpa (my Dad) was a Colonel in the Air Force and her Dad (Brian) is a two star General in the Air Force Reserves. A proud military family.

We had a very nice Sunday Brunch at Jackson’s looking over the harbor on Channelside Walk Way.  This is just down the block from Megan’s apartment. It was very good, I’m sure we will go there again when we visit another time.

Roba Vieja

Went to Sebring today to do a little clothes shopping. No luck there. The only success I had was I brought back some Cuban food for both lunch and dinner.

For lunch Steve ate a Cuban sandwich along with some black beans and rice and some fried plantains.

For dinner Steve had a very good Cuban stew called Roba Vieja. He finished off the black beans and rice and the plantains.

Keys Trip

The Pit BBQ

Steve left earlier this morning to go fishing in Islamorada with his good buddy Mitch. He called on the way home and said he was going to stop at The Pit BBQ. We have been going to this place for over 35 years. I am 99% sure he ordered the pork plate. I hope he brings me home some ribs….

Thai Chicken CurryUsing the recipe on the jar of Thai Kitchens Green Curry Paste I made Chicken Thai Green Curry.

  • One can of coconut milk
  • 1 Tbsp curry paste
  • 1/4 cup sliced basil
  • 1/4 cup bamboo shoots
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1/3 cup chicken broth
  • sliced baby carrots
  • chopped scallions
  • chicken (bit size pieces)

Basically add all ingredients and heat. Serve over rice.
