We had Skillet Chicken Parmigiana for dinner. Got the recipe right off the Progresso Italian Style Bread Crumbs. Although we are not going back to Colorado for a couple of months I need to start using all the stuff up in the cupboards. Tonights dinner was just that, using what I had on hand. Turned out very good. I used a can of Hunt’s Fired Roasted Diced Tomatoes for the sauce and added a little red wine and chicken broth. You can certainly use your favorite sauce, homemade or not. I also served Rice-A-Roni, corn on the cob, bread and salad.
